I love to cook and try new recipes.  If time was no limit you could find me in the kitchen quite often.  (I just don't like the clean up!)

Summer Vegetarian Salad
Today I made a recipe another mom Rachael, over at Rachael's Adventures in Cooking, first shared with me.  This recipe is easy to make and feeds a lot.

Summer Vegetarian Salad
-sweet corn (I used frozen.)
-black beans (rinsed and drained)
-diced peppers (I used a mixed blend.)
-feta cheese (I used reduced fat.)
-sun dried tomatoes
-lime juice
-garlic salt


I just added as much as I liked of each ingredient into a bowl.  I added garlic salt and lime juice to taste.  Stir and let sit overnight if possible.  You could add a little diced chicken or shrimp for added protein if you wish.  Enjoy!

Puffins
I found a great recipe in pinterest not too long ago.  It was for puffins....pancakes in muffin tins!  It was easier to make than pancakes.  I loved how the syrup was pre-added which made it less messy for my 5 year old.  Ryan chose the different toppings he wanted.  Enjoy!
